Hot Water Pastry


Hot Water Pastry

1 cup of neutral flavored oil (I like canola) OR butter
1 1/4 cups of boiling water
1 teaspoon of salt
4 1/2-5 cups of all purpose flour


-Combine oil, boiling water, and salt in a large bowl. (If using butter instead of oil, melt it in the water while you're boiling it.)
-Add 4 1/2 cups of flour to the wet ingredients and mix with a wooden spoon until combined.  It should be soft and oily but not sticky and floppy. If it needs more flour add the extra 1/2 cup of flour and mix again.
-Roll and shape quickly--while it is still warm--if possible. The longer it rests the less tender and pliable it will be.
